This former Nobu chef offers a similar sushi menu — without the drive to Dallas

Fort Worth may not have its own Nobu, but a local sushi restaurant does sport a former chef from the fine dining sushi restaurant.

Nobu is a name in fine dining known across the world. The global brand has earned multiple Michelin stars at its hotel-based eateries. The restaurant’s Japanese-Peruvian cuisine is most well known for its black cod miso, spicy tuna on crispy rice and yellowtail jalapeno sashimi.

Chef Pang Bamrungsin brings her expertise from the Nobu empire to Bedford. She opened Bleu Bear Sushi in May 2024 after 10 years of experience at Nobu Chicago.

Bleu Bear Sushi serves Nobu inspired dishes like yellowtail and yuzu sashimi, fried avocado topped with spicy tuna and wagyu gyoza dumplings.

So for Tarrant County locals who don’t want to make a trek out to Nobu in Dallas, here’s what to know about Bedford’s own Japanese fusion eatery.

What’s on the menu at Bleu Bear Sushi in Bedford?

Bleu Bear Sushi’s menu ranges from $20 to $30 per person.

Some items unique to the restaurant include:

  • Avocado Spicy Tuna: fried avocado, topped with spicy tuna, spicy mayo, kabayaki sauce, scallions, masago.
  • Hamachi Yuzu Soy: yellowtail bathed in yuzu soy sauce with house red sauce, jalapeno slice and cilantro.
  • Salmon N Apple: fatty salmon wrapped around a marinated apple slice with truffle, chili soy sauce and cilantro.
  • Chu Toro Yuzu Miso: fatty tuna with yuzu miso, fried shallots, wasabi cream, wasabi salsa.
  • Wagyu Lover Maki: mixed snow crab and asparagus tempura, topped with Japanese A5 wagyu, ponzu and spicy garlic.
  • Hamachi Lover Maki: yellowtail, mango, and cilantro, topped with more yellowtail, yuzu soy sauce, jalapeno, spicy mayo, and red tobiko.
  • Snow White Maki: spicy salmon and shrimp tempura, topped with seared escolar (makarel), truffle oil, and a touch of cranberry sauce.
  • Fuji Mountain Maki: mango and cream cheese topped with spicy salmon, shiso leaves, wasabi cream, kabayaki sauce, tongrarashi dashi (spice blend).

More about Bleu Bear Sushi

Bleu Bear Sushi is located at 2807 Central Drive in Bedford. It is open Tuesday through Thursday for lunch and dinner, 11:30 a.m.-2:30 p.m. and 4:30-10 p.m. On Fridays through Sundays, the hours are 11:30 a.m. to 10 p.m.

The restaurant does offer a happy hour Tuesday through Thursday from 4:30 to 7 p.m., with $5 select appetizers, $4 sake, half-priced half rolls and more.
