A specialty meat market will open a second location in Tarrant County. See where

Southlake is getting a new specialty butcher store that will carry gourmet food and fresh cuts of meat.

The New York Butcher Shoppe, a franchise that was first established in 1999, is opening its second Tarrant County store owned by married Colleyville couple Ruth and Bryson Nokes. The new store is expected to open around September 1.

The store will be located at the Southlake Marketplace shopping center on 2001 W. Southlake Blvd. Suite 149 near Delucca.

Ruth said she and her husband came from a corporate instead of a food background, but noticed that there weren’t a lot of specialty butchers in the area.

“There’s no other meat market that has all the options that we do, which is prepared meals that we make in house, wines, beer and some specialty grocery items, and all the protein options,” Ruth said.

The couple also owns and operates the first location that opened in Texas, which opened in Colleyville in August 2024 at 3855 Glade Road. There is also another location that’s owned by another franchisee in Houston.

Customers can also expect certified angus beef, prepared sides, salads and entries that are available daily.

The beef is sourced from a network of Texas and Canadian family farms and the shop also offers a weekly prepared meal menu with sides, salads and entrées.

“We’re consumers of good quality foods, and we recognize that there’s a lack of this in the area,” Nokes said. “For as big as our Metroplex is that shouldn’t be the case.”

Nokes said the beef that the store carries is wet-aged for a minimum of 21 days, meaning that the meat is sealed in its own juices, leading to the meat enzymes being broken down and softened on their own.

“It’s just extra tender, extra flavorful when you have the wet aging,” Nokes said.

The shop will also offer a dry-aged ribeye steak option, and their prime product is more marbled than U.S. Department of Agriculture’s prime, according to Nokes.

Nokes told the Star-Telegram the Southlake store will initially carry the same items as the Colleyville store, but once they get to know the items their new customers are most interested in, they will shift to accommodate more of that.

The Colleyville store also carries fresh seafood, Heritage breed pork, sausages freshly made in-house, seasoned, marinated, and stuffed options, natural, pasture-raised, hormone/antibiotic-free chicken and more.

The store will also feature holiday items like turkey for Thanksgiving from Diestel Farms and will come with a brining option. Nokes said it's a New York Butcher Shoppe tradition to brine the turkey in a big red bucket that customers can then take home.

The space the grocer will move into is undergoing a $200,000 renovation in the 1,500 square feet store, according to a Texas Department of Licensing and Regulations filing.

The first New York Butcher Shoppe opened in 1999 by Billy D’Elia in Mt. Pleasant, S.C. There are now multiple franchises across much of the southeast, including in Ohio, Missouri, Alabama, Arizona, Georgia Florida, Tennessee and North Carolina.
