Cattlemen’s in Fort Worth adds a patio, plus a Wynn chef from Vegas

Everything at Cattlemen’s Steak House is new, and now that includes a patio and the chef.

Well,— not quite everything is new.

“I don’t think we’re going to get rid of the calf fries,” chef Ted Tom said with a grin in the newly sunlit dining room at the 78-year-old steakhouse, 2458 N. Main St. in the Fort Worth Stockyards.

Cattlemen’s reopened last year after a $2 million remodeling under new owner Taylor Sheridan of “Yellowstone” and his Hollywood partners.

Sheridan’s steaks were showcased last year at the Wynn Las Vegas resort, and he brought back a chef.

Tom, a Denver native, was assistant executive chef at the Wynn’s high-rated SW Steakhouse.

He came to Cattlemen’s in May and tinkered with the revised menu that had been served since the restaurant reopened last fall.

He added a braised beef short rib with polenta, for example, and a crabcake appetizer.

The creamed spinach appetizer and the Wagyu meatballs are made without gluten for guests needing special diets, he said.

Tom has continued to expand the menu. It now offers 10 steaks from a $39.95 sirloin platter (including salad and potato) to a $140 2-pound tomahawk chop rib-eye from Sheridan’s Bosque Ranch south of Weatherford.

Tom started his career in music production before friends at the Wynn got him into the kitchen. At the Wynn, he was at SW Steakhouse 14 years and at Lakeside.

Cattlemen’s has been impressive since its reopening a year ago.

The chicken-fried steak is exceptional. Fried catfish — not on the current menu — was some of the city’s best. Side dishes like the chicken tortilla soup showed exceptional effort.

The portions are large. Plan to split any order.

Cattlemen’s has opened its new, stone-trimmed patio alongside rhe restaurant, including a stagecoach from the “Yellowstone” set. There’s also a smoker to add ribs, smoked chicken and stuffed jalapenos.

Tom is also the chef for the $3,000-a-year adjacent private membership club, the Cattlemen’s Club, expected to open later this year.
