A Kansas wagyu ranch has opened a unique meat market in Southlake
A Kansas ranch that specializes in wagyu beef has opened a retail meat market in Southlake.
Booth Creek Wagyu is a vertically integrated operation, meaning they raise the cattle on the 5,000-acre ranch near Manhattan, Kansas, process the meat and distribute it to their small number of stores. All of the facilities are within a 30-mile radius, which the company says makes it unique for fresh wagyu.
The Southlake location at 1161 E. Southlake Blvd. is the first in Texas.
The family-owned company’s other stores are in Wichita, Overland Park, Manhattan and Prairie Village, Kansas.
Customers can find ribs, jerky, steaks including marbled ribeye, filet mignon, briskets, roasts, ground beef and tallow. The company works on a sample concept, and customers can try the beef and learn more about the process before making a purchase.
The Southlake location underwent a $250,000 renovation in an existing 1,472-square-foot retail space that previously housed a Creamistry ice cream shop.
“We’re proud to bring our ranch-to-table experience to Texas,” a post on the market’s social media read. “As a family-owned, vertically integrated operation, every cut in our case is raised and crafted with intention from start to finish.”
Mike French, district manager of Booth Creek Wagyu, said the company recently trademarked the motto “Changing the Way America Eats Their Beef” and wanted to prove that concept in Texas.
“We’ve been very well received in this market,” French said. “We have customers who are really excited for the product we’re bringing, they’re really interested in wagyu, knowing exactly where the cattle came from and knowing how they’re treated.”
A grand opening date has not been announced yet but the store is open Monday to Saturday from 9 a.m. to 7 p.m., and 10 a.m. to 6 p.m. on Sundays.
