Remember that World Health Organization warning earlier this week linking processed and red meat — including bacon — to cancer? Don’t tell Texas Motor Speedway.

Or do tell. TMS probably knows. And it has an answer: more bacon.

On Thursday, TMS and Levy Restaurants announced that they had “once again captured their fans’ love of bacon” with a couple of new items they’re putting under the umbrella title “Fire and Ice.” But really, it’s all about the bacon. The new items will be available Nov. 5-8 during the AAA Texas 500 NASCAR tripleheader weekend.

“Fire” comes in the form of the Hawg Heaven Double Barrel Dawg, an extension of the Hawg Heaven line.

From the press release: “Following in the footsteps of the widely popular Hawg Heaven Queso Wing, Hawg Heaven Bacon Nachos, Hawg Heaven Bacon Cotton Candy and Shake 'N Bacon Brew, this sandwich is all about” — stop us if you’ve heard this — “bacon.”

Actually, it’s about more than bacon. The sandwich includes two foo-long Texas Hot Links (made by Ponder-based Syracuse Sausage), a jalapeño bacon and caramelized onion mix and bacon queso (with more jalapeño), It’s all topped with crunchy, spicy pork rinds. Lot of fire in there. And bacon.

“Ice” comes in the form of Final Rocky Road-eo Sundae, a tribute to Jeff Gordon, who will be making his final race at TMS during AAA Texas 500 weekend.

“It is well known that the four-time Sprint Cup Series champion's favorite ice cream is Rocky Road, and its combination with bacon is sure to excite the tastebuds,” the release says.

You have probably guessed that they aren’t stopping there.

“The sundae features a Krispy Kreme maple bacon doughnut, two scoops of rocky road ice cream, hot fudge sauce infused with bacon, bacon whipped cream, honey roasted peanuts, chocolate chips, marshmallows and candied bacon.”

And, in case you’re keeping score: “The two scoops of ice cream and four kinds of bacon are the perfect way to celebrate Gordon's final race at Texas Motor Speedway.”

"There is nothing better than a little spice to start a meal and then finish it off with a cool treat,” Lincoln Engstrom, Levy Restaurants executive chef, says in the release (Engstrom gives a demo in the video above). “No one will be disappointed with either of these great items as the oversized sandwich is a meal in itself and the sundae is the perfect way to finish the meal off."

We like a chef who says that the way to finish off a meal ... is to add more meal!

The sandwich will sell for $11. The sundae costs $10. Both will be available at the concession stand inside Gate 4 of the speedway.

Texas Motor Speedway's tripleheader weekend features the NASCAR Camping World Truck Series WinStar World Casino and Resort 350 at 7:30 p.m. Nov. 6; XFINITY Series O'Reilly Auto Parts Challenge at 2;30 p.m. Nov. 7; and culminates with the Sprint Cup Series AAA Texas 500 at 1 p.m. Nov. 8.
