A baker’s dozen restaurants of a wide variety opened in Keller last year, with several more planned to open in 2015.
Fast food joints, burger spots and ethnic restaurants joined a new brewery, dine-in theater and an organic juice bar, among others, as new additions to Keller’s restaurant landscape. Six more are planning a 2015 opening, including Rabbits Garden Fresh Cafe, which had a soft opening in January but is planning a grand opening in a few weeks.
The cafe, run by owners Matt Rakoczy and Shanon Shemwell, is a fast casual eatery that highlights a healthy menu with a focus on its vegetables and proteins. Rakoczy contrasted the restaurant to Panera Bread or Corner Bakery cafes, “which focus on the bread.”
“We think there’s a market in Keller for the food we want to serve,” Rakoczy said.
“It’s a better alternative to fast food,” Shemwell added. “There’s a lot of chicken places here, so it’s good to have healthier food that tastes good.”
The new restauarant offers vegetarain, vegan and gluten-free options, though it “appeals to a broader spectrum.” The owners, who have lived in Keller on and off since the 1980s, are still modifying the menu before the grand opening begins.
“The community has been really welcoming,” Shemwell said. “The city really supports the local businesses and we’ve had good turnout and support.”
Other restaurants “coming soon” include a steakhouse, a Mexican restaurant, a coffee shop and two sandwich shops. Expected opening dates haven’t become available yet.
