Carrot Daiquiri is downright righteous


There may be no such thing as a healthy cocktail, but Lanny Lancarte’s Carrot Daiquiri comes close. The owner and “executive tastemaker” of Righteous Foods, Fort Worth’s new clean-eating concept, uses organic spirits, sensibly sourced ingredients and cold-pressed juices to create guilt-free libations. Shake one up as an innocent treat for initiating all those New Year’s resolutions, and toast to retoxing responsibly in 2015.

Carrot Daiquiri

Serves 1

• 1 1/2 ounces spiced rum

• 1/2 ounce orange liqueur

• 1 ounce cold pressed carrot juice

• 1/2 ounce simple syrup

• 1/2 ounce lime juice

• 1 piece sliced carrot, for garnish

• 1 mint sprig, for garnish

Place rum, liqueur, carrot juice, simple syrup and lime juice in a cocktail shaker. Shake and pour, without straining, into a rocks glass filled with ice. Garnish with carrot and mint.
