The Stockyards has fresh meat.
A new IDC Burgers on West Exchange Avenue looks down on other burger restaurants, and not only from its hilltop location inside Lil’ Red’s Longhorn Saloon.
IDC started in Aledo, where Parker County took quickly to the Sweet Heat burger with Parker County peach-jalapeño marmalade.
The new location has a larger menu with 10 burgers, some new, plus addictive hand-cut fries, wings, salads and five kinds of tacos.

A Tres Chiles burger combines fresh-packed beef with grilled jalapeños and onions, pepper Jack cheese and a housemade hot sauce on a jalapeño cheddar bun.
The basic burgers come on the now-familiar sweet-sourdough buns, but jalapeño and wheat are options.
The taco menu features Lil’ Red’s brisket tacos and new items like the “Roof on Fire” with glazed chicken, grilled jalapeños, peaches and peach-chile hot sauce.
It’s all served in the historic Longhorn Saloon setting daily at 11 a.m., and Fridays and Saturdays until 3:30 a.m.
Jerred Fulbright’s first IDC continues inside an Aledo gas station. He has tinkered with recipes, cutting back on a popular but too-strong seasoned pepper.
“I always wanted to expand outside a gas station, and into Fort Worth,” he said this week.
At the old-timey Longhorn, he draws a daytime and late-night crowd for burgers and wings, and feeds diners who come by night for the music.
IDC is open for lunch and dinner Tuesdays through Saturdays, until 3:30 a.m. Saturday and Sunday mornings and then at 11 a.m. Sundays for lunch. Children are welcome before 10 p.m.; 121 W. Exchange Ave., 817-771-9595, idcburgers.com.

Chef Grady Spears’ new Horseshoe Hill Cafe is about a week from opening.
The menu will feature Spears’ award-winning chicken-fried steaks five ways, plus calf fries, “one-pot” meals such as chicken and dumplings, and a tamal of the day.

A Cowboy party
One more Stockyards note: Los Vaqueros Restaurant will throw parties throughout August to celebrate the 100th anniversary of the historic D. Hart & Sons building.
In 1996, Los Vaqueros (“the Cowboys”) moved from a nearby site into the former packinghouse and refrigeration warehouse at 2629 N. Main St.
“Los Vaq” will have daily specials in August. Watch the restaurant’s Facebook page, available through the website at losvaqueros.com.
