In the summertime, tomatoes are fresh, flavorful and in season. And in North Texas, there’s no better way to pay homage to the tomato than by preparing homemade salsa. For 10 years, diners at Tres Casas Mexican Grill in Old Town Keller are welcomed at their tables with bowls of the restaurant’s delicious and addictive fresh salsa. The recipe is by Gerardo “Gerry” Devora— who, along with his wife, Morayma, owns Tres Casas.
Growing up just south of the border in Juarez, Mexico, Devora said he watched his mom make the salsa every day. He was able to reproduce her salsa from memory, and fortunately for us, he is sharing this treasured recipe. While pairing it with corn tortilla chips is the obvious choice, Devora also recommends it on top of tacos, enchiladas, or even for breakfast served over huevos rancheros.
Tres Casas Fresh Salsa
• 12 roma tomatoes
• 1/2 jumbo sweet yellow onion,
• 2 large jalapeño peppers,
• 1/3 bunch fresh cilantro,
chopped by hand
• 16 oz. cold water
• 1 teaspoon salt
• 1 teaspoon lemon pepper
• 1/4 teaspoon granulated garlic
• 1/2 tablespoon chicken base,
such as Knorr’s
• Juice from one fresh lime
In a bowl, thoroughly crush tomatoes by hand. Mix in onion, jalapeño and cilantro. In a separate bowl, mix dry seasonings with water. Add fresh-squeezed lime juice to seasoned water, then add to tomatoes mixture. Whisk ingredients together.
Chill well, then serve.
