Eats Beat: A new fast-service pizza counter goes for the snob appeal

Pizza Snobis off to a busy start.
And partner/manager Blake DeMent says the startup pizza company’s menu is about to get better.
A new gluten-free crust will premiere next week with a flavor close to Pizza Snob’s original light, airy crust, DeMent said. Breakfast pizzas and other new toppings are also in the plans for the first-of-its-kind casual pizza counter on South University Drive.
If you haven’t tried Pizza Snob yet, everybody has a different description. Basically, it’s like fast-service Pie Five Pizza but with artisan toppings and a crust no heavier than, say, pita bread.
DeMent said he and creator Jim Wisniewski were trying to come up with a fast-service pizza but wanted a better crust.
“I call this ‘golden buttery,’ ” he said. The effect is a lighter-than-air pizza, but with toppings like candied jalapeños or Peppadews.
The plum tomato sauce or alfredo sauce is lightly applied. Everything about the Snob pizza is much lighter than a typical individual pizza.
The Snob also has a signature kale salad, Maine Root sodas and specialty teas. Pizzas and salads cost less than $10.

But even after Cane Rosso’s near southside Fort Worth pizzeria opens, the restaurant will continue to serve pizzas Thursdays and Fridays in February at the west side Times Ten Cellars winery.
Times Ten’s relationship with Cane Rosso goes back to the original wine shop in Lakewood. The pizzeria sends a truck to the Fort Worth winery with a menu of about 10 pizzas plus the pizza-sized salads.
When Cane Rosso opens, it will feature a special Fort Worth pie called “Gipsy Danger,” a reference to Pacific Rim. It’s a “white pie” with roasted jalapeños, mushrooms and spicy marmalade.
