Eats Beat: In Southlake, it’s happy new Del’s

New Year’s must be the worst week to open a brand-new restaurant.
Or the best.
In the case of Del Frisco’s Grille in Southlake, it’s a chance to break in a new location and staff on a busy night, then run its first brunch on New Year’s Day.
“The holidays are prime time in the [Southlake Town] Square,” said general manager Sabrina Scully, a longtime Sullivan’s manager who opened the Dallas Del’s location two years ago.
“We get a lot of exposure on this corner and the upstairs patio has a view. We want to be the neighborhood restaurant.”
Chef Aaron Henschen also helped open the Dallas grill. His special menu for Southlake adds a barbecue brisket-jalapeño flatbread and a deluxe fried chicken sandwich.
In Dallas, Del Frisco’s Grille has an appetizer hummus plate. In Southlake: fresh guacamole.
“I think we’ll serve more steaks here, and we know we need a good kids’ menu,” Henschen said this week.
The new Grille will open Monday night and be open Tuesday with off-menu New Year’s Eve dinner specials, then serve its first brunch Wednesday on New Year’s Day.
The brunch menu includes chicken and waffles, crab cake eggs Benedict, a green chile pork burrito, and a red velvet Belgian waffle with bacon.
