Eats beat: Dive into Jon Bonnell's Waters next week

A new prime seafood restaurant will open next week.

Then we'll see whether crowds walk in Waters.

But first, there's a sneak preview Thursday for chef Jon Bonnell's latest, an oyster bar and flown-fresh seafood grill near West Seventh Street.

Waters' opening event will be a charity party and tasting. The party is a benefit for a juvenile diabetes clinic in Haiti, a cause for Bonnell's doctor brother, Ric.

"We figured if people want to see, we'd show them around," Bonnell said.

He still plans to open Waters for dinner on the weekend of March 29, then to serve Easter brunch.

The preview will start at 6 p.m. Thursday. It will include oysters, a few other samplings and Bonnell's clever selection of wines, for a $100 ticket.

Ric Bonnell's charity is the Kay Mackenson diabetes clinic, an effort to lower the mortality rate among Haitian children with diabetes.

When Waters opens for good, it will serve eight to 10 kinds of fresh oysters plus about five seafood entrees, Jon Bonnell said. A final menu was to be settled Tuesday.

Twelve years after he opened his first restaurant, Bonnell's Fine Texas Cuisine, Bonnell said this wasn't as much of an ordeal.

"When we opened the first place, we were here 24 hours a day," he said.

"I took every phone call. ... This opening hasn't been as hectic. But the public has high expectations."

Unlike most fine-dining restaurants, Waters will keep regular hours. After serving lunch only next week, it will be open all day Mondays through Saturdays and for lunch Sundays beginning in mid-April.

Waters is at 2901 Crockett St., in a former prime steakhouse;

Queenie's , the new high-end steakhouse from Lonesome Dove chef Tim Love, is expected to open the first weekend of April.

Queenie's replaces a former Love Shack at 115 E. Hickory St., Denton.

Easter is a special holiday. So even some private clubs will open to the public.

Rolling Hills Country Club is booking public reservations for its elaborate Easter brunch ($26.95).

An addition to the Easter choices this year: Ferre Restaurant in Fort Worth will open at 10:30 a.m. and serve a three-course special for $27.95.

Entree choices include lamb T-bones, roasted salmon, Parmesan-crusted chicken, or steak and eggs;

Capital Grille, H3 Ranch, Mercury Chophouse and Reata all had tables available early this week.
