Caramel Apple Baked Brie
Never miss a local story.
Prep Time: 20 Min
Total Time: 40 Min
1 tablespoon butter
1/2cup chopped peeled firm apple (Braeburn, Gala or Granny Smith)
1/4cup sweetened dried cranberries
1/4cup packed brown sugar
2 tablespoons chopped shelled pistachios or pecans
2 tablespoons brandy or apple juice
1 round (8 oz) Brie cheese
Baguette French bread slices, assorted crackers or fresh apple slices
1. Heat oven to 350°F. In 8-inch skillet, melt butter over low heat. Add apple, cranberries, brown sugar, pistachios and brandy; cook 3 minutes or just until apples are tender, stirring frequently.
2. Cut Brie round in half horizontally; place bottom half in ungreased 9-inch pie pan. Spoon half of fruit mixture over cheese; place top half of cheese over fruit. Top with remaining fruit mixture. Secure with 3 toothpicks.
3. Bake 15 to 20 minutes or until cheese is soft. With broad spatula, slide Brie from pie pan onto serving platter. Spoon any syrup and fruit from pan over top. Serve warm with baguette bread slices.
Toss it or keep it: Check the brie at 10 minutes in the oven. At 15 minutes the brie I cooked was really soft and oozed out a bit. Otherwise this is an easy party appetizer that is worthy of any holiday gathering.
