Note: The dropper in the photo is filled with the restaurant’s house-made bitters, which come standard with some of its cocktails at the bar but aren’t a part of the recipe to make the drink at home.

 4 ounces floral tea that

 has steeped for one week, then

 been filtered (a citrus-berry

 blend is recommended)

 2 1/2 ounces gin (Hendricks

 or Bombay is recommended)

 1 teaspoon simple syrup

 Juice from half a lemon,

 freshly squeezed

 Brandy-infused cherries for

 garnish (infusing for at least a  week is recommended)

 Mint leaves for garnish

1. Stir together tea, gin, simple syrup and lemon juice.

2. Pour over ice-filled serving glass and garnish with cherries and mint leaves.

One of spring’s most anticipated restaurant openings in Fort Worth was Bite City Grill. We’ve already been wowed by the varied menu of James Beard-featured chef Eddy Thretipthuangsin, who’s slinging lemongrass coconut clams with Spanish chorizo, beef carpaccio and diver scallop risotto in his new Montgomery Plaza home.

But give his brother Chris credit for the cocktails, which are named for zodiac signs and inspired by their corresponding personality traits. Most of April belongs to Aries. Those born under this sign — reportedly adventurous, confident and dynamic — are sure to appreciate this deeply aromatic birth month cocktail featuring floral tea, gin and brandy-soaked cherries. The rest of us will, too.
