Hats off to all of our local grocery stores! In spite of Kraft’s announcement of a shortage of Velveeta cheese (which made national news), Mansfield was spared. Viva el queso!Speaking of our local grocery stores, I am thrilled to find Pillsbury’s seamless crescent dough. It makes semi-homemade cinnamon rolls so much easier. And I just discovered a mix for the famous Red Lobster biscuits in our local stores! Awesome. Now if I could only find Alphabits in Mansfield I wouldn’t have to go out of town to find my husband’s cereal. (Ooops! I probably should keep it a secret that my sweetheart loves Alphabits.)The Easiest Mini-Cinis 2 (8 oz. cans) refrigerated Pillsbury seamless crescent dough or2 (8 oz. cans) refrigerated Pillsbury crescent rolls6 tablespoons butter or margarine, softened (not melted)1/3 cup firmly packed brown sugar1 tablespoon sugar1 teaspoon ground cinnamon2/3 cup powered sugar1 tablespoon milk or half-and-half1/4 teaspoon vanilla or almond extract1/8 teaspoon saltUnroll the crescent dough sheets. (If using the crescent rolls, unroll and separate each dough portion along center perforation to form four rectangles; press diagonal perforations to seal. Stir together butter and next three ingredients; spread evenly over one side of each rectangle. Roll up jellyroll fashion, starting at the long end. Gently cut each log into 12 pieces, using a serrated knife. To make slicing easier, place unbaked rolls on a baking sheet, and freeze for 10 minutes. Place rolls, 1/4-inch apart in greased cake pans. Bake at 375 degrees for 15 to 18 minutes or until lightly golden brown. Let cool five to 10 minutes. Stir together powdered sugar and remaining ingredients. Drizzle over warm rolls. To Make Heart-Shaped Mini-Cinis, the directions are the same, except roll the dough, roll in each long side towards the middle. Cut the log links into 12 rolls using a serrated knife. Pinch the bottom of each roll to make the bottom point of the heart. Decorate top, if desired. Place in refrigerator for at least 30 minutes to set. Cut into squares or use heart-shaped metal cookie cutter and serve. In this size pan, the fudge pieces are just a little over 1/2-inch thick. If you want thicker fudge, make a double batch.Cute As a Button Pretzels Square pretzelsHershey’s Hugs (similar to Hershey’s Kisses), unwrappedValentine M&Ms (or Raspberry M&Ms) Preheat oven to 200 degrees. Line a cookie sheet with parchment paper. Place the pretzels on the cookie sheet and top each with a Hug. Bake for 4-5 minutes until the chocolate is shiny and soft, but NOT melting they should still hold their shape. Carefully place an M&M in the center of each Hug and press it down to spread the chocolate. Allow to cool completely, a few minutes in the fridge works perfectly. - Suzi Hogan lives in Mansfield with her husband, Tim.
