The best little gumbo cafe in North Texas has a new neighbor.Gogo Gumbo! chef Kraig Thome has opened Canteen next door, bringing the same salads, soups and desserts along with a new lunch menu to Wise County.If you’re not familiar with Gogo Gumbo! — well, that’s where the traffic on Texas 114 or U.S. 287 is headed most weekend nights.Thome is a former country-club chef in Houston. He opened a better-quality seafood and gumbo dinner cafe in the town of Boyd, about 5 miles west of U.S. 287.His new restaurant, Canteen, is a soup-salad-and-sandwich lunch cafe, but not an ordinary one.The Canteen house salad features strawberries, apples, walnuts, spinach and vinaigrette. Or a Gogo salad comes with greens and a pecan-feta balsamic combo.Canteen also serves sandwiches and a few simple entrees such as meatloaf, crab cakes or blackened chicken fettuccine.
