Rio Mambo offers a variety of great dining choices

Brent Johnson has a winner on his hands.

If you haven’t made it to his restaurant, Rio Mambo located at 1302 S. Main St., you’re missing out.

On this particular occasion, I opted to take the more traditional approach and try the Combinacion Enchilada lunch special, choosing the shredded chicken as my protein. My dining companion went for the Three-Cheese Dilla which came with Monterey Jack, Cheddar and Anejo cheeses. As a twist, she added chicken to the blend as well.

Before the meal arrived, I couldn’t help but notice the chic, uptown interior in a town known mostly for its Western appeal. The color scheme is modern, complete with a framed wall of water that bubbled creating a special effect that in a word was - awesome. The traditional chips and salsa was great; the chips being both crispy and fresh and the salsa spicy but not too hot.

In short time, the meal arrived and my enchiladas were delicious and served with a crema verde sauce. The rice and beans that came with it made for a very satisfying meal and at just $6.95, a real winner.

My partner’s quesadillas were incredible. They were crisp, grilled flour tortillas filled with chessy chicken goodness. Ordinarily, the dish would ring up at $8.95 but with the addition of chicken it increased the price slightly.

The menu, while extensive, is easy to understand. They offer a wide array of food options which include classic Tex-Mex to beef, chicken and seafood offerings. As temperatures begin to warm, their patio looks like the place to visit and have a refreshing glass of iced tea.

During our dining experience, the staff was both helpful and courteous. I’ll be back.
