I think I share everyone's sentiment that this week has been a stressful one (to say the least). Between the heat and the honey-do list, the fantasy of sitting next to the pool with a large margarita has been the only thing that has kept me going (that and a large Starbucks iced VIA).
However, the fantasy of having a cocktail is exactly that - a fantasy when you have to take care of so much morning, noon and night. That's why I though I would share a great recipe for a margarita you can enjoy without the repercussions from Margarita Mama - Mocktails for Moms-to-Be. It's got the taste of what you need without anything to worry about for both mommy and mommy-to-be!
Margarita Mama
(Makes 6 servings)
Kosher Salt
12 oz frozen limeade
6 oz orange juice
10 oz water
2 oz peach juice
8 oz ginger ale
1 cup ice
6 lime wedges
Pour the salt on a plate, rub the rim of each of the glasses with a lime wedge and dip the rims to coat with salt. Pour the rest of the ingredients into a blender and blend until smooth. Pour into glasses and garnish with a wedge.
Salud!
