1/2 lb. butternut squash, peeled, seeded and cut into 2 inch pieces
1-1/2 Tbs. unsalted butter
1 clove chopped garlic
1/4 lb. mushrooms, sliced
1/4 tsp. salt
1/2 cup dry vegetable stock
3/4 cup heavy cream
1 tsp. dried parsley
12 oz. linguine
Place squash in a steamer basket over boiling water. Cover saucepan and steam 10-12 minutes or until tender. Remove from steamer basket and set aside. Melt butter in a heavy nonstick skillet over medium heat. Sauté garlic 3 minutes stirring frequently. Add mushrooms, salt and pepper to taste. Sauté 3-4 minutes or until mushrooms are tender. Stir in squash and stock and boil 4-5 minutes or until mixture is reduced by half. Stir in cream and simmer 5 minutes or until sauce coats the back of a spoon. Stir in parsley. Set aside and keep warm. Meanwhile, cook pasta in boiling salted water until al dente. Drain pasta and combine with sauce. My dad is a farmer so he gives lots of advice in short sentences. The three that I turn to the most are the following. "You have a 50/50 chance of rain everyday. It either will or it won't" - spoken as words of encouragment while it was pouring hours before my outdoor wedding. Wasn't very comforting then, but I use it all the time now. I realize he was trying to tell me that everything is 50/50 in life. Things will either go your way or they won't and many times there isn't much you can do about it.
The second piece of advice "The more I'm around people, the better I like my cows." This was always given out when the kids at school didn't play with me or I wasn't invited to go somewhere and my heart was broken. Today, I totally understand and appreciate being with the cows. They only ask for food and water. They don't judge or say hurtful things. They are easy to understand and we all know that us humans are complicated. Sometimes when things get crazy, I find myself outside just watching the cows and take comfort from their easy life.
Last is my favorite piece of advice "If you don't laugh at yourself, you'll go crazy". I find that if I follow this and just laugh when things go wrong, I don't get so upset and mad. It had a 50/50 chance of not going right and to get mad and throw a fit doesn't do anything but make it worse. Laughter makes you feel better, and the people around you can find that laughter a great release in the aftermath of chaos. It's why Dad had the preacher tell funny stories at his parent's funeral. So now, when I'm about to cry or get mad, I look for the laughter. I've shared this piece of advice with my son's friend when her aunt died. She told me that laughing was the one thing that helped her get through such a hard time. So now as I right this and tears well up in my eyes, I laugh because Dad will never read it - he doesn't know how to turn on the computer and doesn't have internet access!

Some great advice my dad gave me while growing up was "To stay at any job I was at, for at least three weeks." This way, you get to know your way around your work place, get to know people who are your co-workers, and get to know the job functions. My Dad grew up with a father who always was going from one job to another. Leaving him and his family either hunrgy, without clothes, and a lot of the times, his Dad wasn't even around.
There were many times while I was working as a yong adult, where I wanted to quit and just go on to something else. Yet with this advice, I did stay at several jobs, which even though at the first, I may have hated, I ended up loving it and making a lot of memories and gaining valuable work experience.
This advice, along with so many others that I am not able to share at the moment, is what makes me smile when I think of my Daddy. He's a wonderful man who worked hard all his life and supported his family. Not just with money, but also with support, advice, love, friendship and more.

The greatest gift my mom ever gave me was time with my grandmother. My mother would allow me to spend time with my grandmother anytime I wanted. I usually spent the weekends, and summers with her. My grandmother was a wonderful person and I cherish the time I got to spend with her. my mother knew how much it meant to me to be with my grandmother so she always allowed me that time.

I would have to say what she gave me was unconditional love ,compassion and tried her best to give me the wisdom I would need to deal with life's lessons.
I was a teen-age pregnancy and she stood by me through thick and thin. My father had died as a child and it was just her and I. I met someone and of course fell head over heels in love and she kept telling me he is not good for you. I didn't listen and thought I had the white picket fence marriage. He had children, I had children and life was good. So I thought. It was her keen sense of people. We soon divorced and everything she saw was true. She never told me not to marry him, she said search deeper within to see the person he really is because I don't think he is the person you see. Again, she was right.
My daughter got pregnant as a teen-ager as well and I was not as compassionate as my Mom was. My reasoning was different from hers but I did not want my daughter to keep the baby. My Mom came up to me and said with tears in her eyes "I never turned my back on you." I don't know now what I would do with out my grandchild. I know my daughters single parenting life has not been easy but I can not imagine him not in our lives. I think Mom is his guardian angel because he has so many of her qualities and kindness. I lost my Mom 10 years ago and I am so sorry she did not get to meet this fine young man. I still tear up when I think of the day in the living room when she looked at me with tears in her eyes and said "I never turned my back on you."

My mom has been a strong role model for me in my life. Of course growing up I did not realize how strong until I became an adult. My parents divorced when I was 10, she always encouraged a relationship with my father, she never spoke poorly of him in front of me, and kept her opinions to her self although she had all the reason and right not to.
Now as a married woman with stepchildren I know how important it is to facilitate a loving relationship between my husband and his daughters. I am reminded all the time of the great strength my mother exhibited during one of her toughest and darkest moments and how precious relationships are and how fragile they can be. Because of this strength I have been able to be the strong touchstone my family needs, and for this my stepchildren and my husband love me dearly. I could never thank her enough.
When my 19 year old brother passed away of cancer, she didnt need me as a daughter nor did I need her as a mother as much as we needed each other as friends. Because we have always been best friends from the get go we were able to support each other during the single most painful moment of our existence. Even when the fog of pain was so dense I knew I could reach out and she would be there to grab my hand as I would do for her when she was lost in the fog.
We haven't always had tough moments in our lives, we are the friends and the mother/daughter we are because of what we have been through, not despite it. We can laugh so hard we cry, we can talk so long our phones run out of juice. I love my mom for what she has done, who she is and for who she has yet to become. She makes me want to be a better woman. I am so blessed to have been given the gift of a woman as wonderful and as strong as my mom. I am eternally grateful.

It's so hard to know how to label my Mom's greatest gift. She's generous, giving, friendly, hard working, loving, and so much more. And she's NEVER met a stranger. Her greatest gift? Just being herself. She is a wonderful person that has done so much for me and those around her, but it comes so easily to her.
Back in High School, my friends called her Mama Hof. She would do anything for them, just like she would have done anything for my brother and I. She even fed them homemade muffins when they were toilet papering our house! There were several times that I would get home and find my friends had come to visit with her because they knew I was out. She's everyone's Mom, if you need her.
She's taught me that life happens, and you just handle what comes up. I had experimental heart surgery when I was 28. I had just been married 9 months before after a quick 7 month relationship (when you know, you know! I love you, Mark). She was there for me, making sure I could bathe and keeping the incompetent tech away from me that didn't know how to draw blood. Even bigger, she was there for my brand new husband when he was terrified of losing me.
She watched my 3 year old when complications kept my newborn in the NICU for 12 days and kept me sane when my hormones and fear could have torn me apart.
She helped me plan my wedding in less than two months after that whirlwind romance, and we had a blast doing it (what do you expect when the wedding is on April Fools Day!).
She often has a 'little old lady' that she ends up adopting, and she makes them feel special and loved while making sure they have what they need to feel safe and taken care of. As I now try to help my 90 year old Grandmother-in-law, she's helping by watching my 2 and 5 year old so we can go to doctor's appointments.
She's just a truly good person that would do anything for anybody, and it's effortless because that's who she is. She gets upset when people are grateful for what she does because she doesn't think what she does is special. But she's my hero and if I could be even half the woman she is, I would be happy. The Rangers were on the field at batting practice and my dad and I, along with a couple of kids collecting the "homerun" balls, were the only ones in the ballpark. We sat behind the dugout to watch the team practice. We never would have been able to do this in the city we moved from. A few minutes later Bobby Valentine, then Rangers manager, stepped out of the dugout, looked up at us and said, "How y'all doing"? We were speechless. A smile came across our faces and we knew right then and there, the Texas Rangers had 2 new fans." I recently met with a personal trainer at the fitness center I belong to, and was telling her of my trials to fit exercise into the busy mom schedule. She said, "Exercise is rarely convenient." It was one of those phrases that just hits home and makes sense, and has taken some pressure off me to create that perfect routine.
